Planting beets

Sow directly 2 to 4 weeks before the last frost, and every few weeks after for succession. Each seed cluster produces several seedlings, so thinning is mandatory.

• Thin to 3 to 4 inches once seedlings stand a few inches tall
• Seed depth: about 1/2 inch
• Thinnings make good salad greens

Growing requirements

Beets need full sun to light shade and loose, fertile soil. Even moisture gives tender roots; dry spells make them woody.

Harvesting and care

Pull roots at 1.5 to 3 inches across for the sweetest texture. Twist off tops before storing, and cook the greens like chard.

Common mistakes

• Skipping thinning, which leaves crowded roots that never size up
• Leaving roots in the ground too long, which turns them woody
• Inconsistent watering, which produces tough, ringed roots

Companion plants

Beets grow well beside onions, lettuce, and bush beans. Their quick season lets them finish before summer crops need the room.
