Planting parsnips
Sow directly in early spring into deep, loose soil. Use fresh seed every year, since parsnip seed loses viability fast, and mark the rows because germination takes two to three weeks.

- Thin to 3 to 4 inches between roots
- Seed depth: about 1/2 inch
- Frost converts starches to sugar; later harvests taste better
Growing requirements
Parsnips need the same deep, stone-free soil as carrots but twice the patience. Keep the seedbed evenly moist through their slow germination and weed-free while the tops are small.
Harvesting and care
Dig roots after a few hard frosts for the sweetest flavor, or leave them under mulch and harvest into winter. Wear gloves when handling the foliage, which can irritate skin in sunlight.
Common mistakes
- Sowing last year's seed, which often fails to germinate
- Digging before frost, when roots are still bland
- Working fresh manure into the bed, which causes forked roots
